You learned "permanent vs. temporary" at A1. It was a useful lie. Here's what's actually going on.

Forget permanent vs. temporary

The A1 rule gets you a long way, then breaks. Está muerto is permanent. Es joven is temporary. The real distinction is different: ser classifies, estar describes a state.

Ser says what something is — which category it belongs to. Estar says how something is right now, compared to how it usually is, or how it strikes you.

Adjectives that change meaning

This is the heart of B2 ser/estar. The same adjective means two different things depending on the verb.

Estar for a change from the norm

Even with ordinary adjectives, estar signals that something strikes you as different from usual — including with food, appearance and mood.

María es guapa.María is good-looking. — a characteristic

The classic trap: location of a thing takes estar — El museo está en el centro. But location of an event takes ser — La reunión es en el museo. If it happens rather than sits there, use ser.

Why estar with food is a compliment. La sopa es buena classifies soup as a good kind of food in general. La sopa está buena says this soup, right now, tastes great. Use ser at the dinner table and you'll sound like you're reviewing a category rather than praising the cook.
